  • The objective of this research was to perform degumming of CPO (Crude Palm Oil) using phosphoric acid and acetic acid. The research was conducted at Chemical of Agricultural Product Laboratory, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University, from April 2016 until August 2016. The research used a Factorial Randomized Block Design with two treatments and three replication for each treatment. The first factor was phosphoric acid at three levels of concentration (0.1%, 0.3%, 0.5%) and the second factor was acetic acid at three levels of concentration (1%, 2%, 3%). The observed parameters were total carotene, free fatty acid, peroxide, iodine value, impurity content, yield and moisture. The results showed that the concentration of phosphoric acid treatment significantly affected the contents of total carotene, free fatty acid, peroxide, iodine, impurity and moisture. Treatment of acetic acid concentration significantly affected the total carotene, free fatty acid, peroxide, iodine, impurity and moisture, and yield. Interaction of concentration of phosphoric acid and acetid acid had significant effect on total carotene, free fatty acids, peroxide, iodine, impurity content and moisture content. The best treatment is A3B1 (concentration of phosphoric acid 0.5% and acetic acid 1%) were free fatty acid 3.81 %, peroxide 2.55 meq/kg, iodine 53.48 mg/g, impurity 0.083 %, and water 0.25 %.
