  • Good hygiene and sanitation of food and beverages need to be reviewed by environmental conditions and good targets, contaminated environment and poor sanitation that does not meet health requirements will cause bacteria or germs to easily enter and cause disease. Sambal is a sauce made from chili which resembles porridge besides it has a variety of tastes according to the level of spiciness and much favored by all Indonesian people, Sambal is made from various processed so sanitary hygiene must be noticed by rice traders so that people who consume it are safe from various microbial contamination . The purpose of this study was to determine microbial contamination in various kinds of rice traders' sambal around campus 3 of UMM. This research was conducted at the Biomedical Laboratory of the University of Muhammadiyah Malang to test. This study uses 4 repetitions. The sample used was 6 samples of chilli sauce which were purchased at rice traders around campus 3 of UMM. Retrieving data by documenting. Record and count the number of colonies then analyzed and compared with the Head of BPOM RI Regulation Number HK.00.06.1.52.4011 in 2009, namely the maximum limit of microbial contamination in food. And to find out sanitation hygiene compared with using the observation sheet. The results showed that rice sauce chili around UMM campus 3 was contaminated by microorganisms. The results of this study will be used as a source of biology learning in the form of material handouts for High School Environmental Pollution class X semester 2.
