  • Bay leaf essential oil (Pimenta racemosa) has been widely used in the food and non-food industry. Because of its low stability, it needs to be protected with microencapsulation technology. Gelatin from skin of fish mackerel (Scomberromorus commerson) has activity as emulsifier, stabilizer and tendency to form a thick network during drying. These properties makes gelatin can be used as coating in the microencapsulation process. Freeze drying method was selected because it produces the highest quality of food product obtainable by any drying method. The first step in this research was the extraction of gelatin from fish skin mackerel. The skin was soaked in 0.05 M acetic acid for 10 hours and then extracted in 62.5°C aquadest for 3.59 hours. The filtrate was dried in cabinet dryer for 48 hours. Emulsion between essential oil and gelatin was made by mixing the oil and gelatin solution with ratio 1:20. The concentration of gelatin solution (w/v) used in this research were 2.5%, 5%, 7.5%, 10% and 12.5%. Homogenization was done at 5200 rpm for 10 minutes. Emulsion was frozen then dried by freeze dryer. Determination of the best concentration based on the highest value of microencapsulation efficiency. Characteristics of mackerel fish skin gelatin that obtained were: yield 13.89%, water content 8.85%, ash 0.83%, fat 0.93%, protein 90.56%, gel strength 199.84 Bloom, viscosity 3.97 cP, pH 5.49 and melting point 30.83°C. The results showed that gelatin at concentration of 12.5% showed the highest microencapsulation efficiency (46.52%) and total oil (2.96%) than other concentrations.
