KARAKTERISTIK DAN IDENTIFIKASI KOMPOSISI ASAM AMINO GELEMBUNG RENANG IKAN PATIN (PANGASIUS SP.) BERDASARKAN PERBEDAAN UKURAN

- This study aims to determine characteristics and identification of amino acid composition of swim bladder catfish (Pangasius sp.) based on sizes differencial. The method of this study used a completely randomized design with three treatment and was carried out with 3 replications. The parameters of this study include physical analysis and chemical analysis that are analysis of ash content, protein content, fat content, amino acid content. The results showed that differences in the size of catfish swim bladder significantly affect the weight at wet condition, length and area of swim bladder in wet and dry conditions; but it has no significant effect on weight at dry condition of swim bladder. The results of chemical analysis showed that differences in the size of catfish swim bladder had no significant effect on the value of ash with a range of 0.14-0.39%, the size of catfish swim bladder significantly affect the value of fat and protein in the range of 3.92-8.74% and 91.98-95.3%. Amino acids identified in the catfish swim bladder have 15 types with the dominant amino acid composition, namely glysine, threonine methionine and valine. keyword : Amino acid, Catfish (Pangasius sp.), Swim Bladder
