  • The objective of this research was to determine the effect of the drying temperature and drying time on characteristics of kelor leaf (Moringa oleifera L.) powder processed by foam mat drying method. The experiment was conducted at the Chemical Laboratory of Agricultural Product Processing Technology Departement of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, from December 2018 to July 2019. The experiment used Factorial Completely Randomized Design with two factors and each treatment was repeated three times. The first factor was the drying temperature (50°C, 60°C, 70°C, 80°C) and the second factor was the drying time (4, 5, 6 and 7 hours). The parameters were yield, color, browning index, water absorption index, specific grafity, angle of repose, moisture contents, ash content, Fe content dan K content. The results showed that the treatment of drying temperature had significant effect on yield, lightness (L*), chroma (C*), hue (h*), browning index, water absorption index, angle of repose, moisture contents, and ash content. The drying time had significant effect on yield, lightness (L*), chroma (C*), hue (h*), browning index, water absorption index, specific grafity, angle of repose, moisture contents, and ash content. The interaction of the drying temperature and drying time factors had significant effect on browning index, water absorption index, angle of repose, moisture contents, and ash content. The best treatment based on yield analysis, lightness (L*), chroma (C*), hue (h*), browning index, water absorption index, specific grafity, angle of repose, moisture contents, and ash content was A1B1 (50°C, 4 hours) with the yield 30.00%, lightness 48.09, chroma 23.48, hue 108.24°, browning index 0.42 A420nm, water absorption index 426.24%, Spesific grafity 0.30 g/mL, angle of repose 38.30°, water content 10.30%, ash content 4.05%, Fe content 102.8 mg/100 g, and K content 2100 mg/100 g.
