- This study aims to were indentify the series of technical activities, analyzed quality product, income and proper business of salted anchovies. The research was conducted in Sungsang village in August to September 2016. Sungsang was chosen as the research area because Sungsang is the largest area of salted anchovy processing in South Sumatera. The data used in this study were sourced from the primary and secondary data. The analysis tools used proximate analysis, income analysis and feasibility analysis. Result showed that proximate analysis of salted anchovy consist of moisture content 33.39%, protein content 43.74%, fat content 2.32%, carbohydrate content 0.40%, histamine content <4.00 ppm, and salt content 15.30%. The average incomes of fisherman was Rp 4.735.290,71 /month. Salted anchovy in Sungsang village was viable business with R/C value 1.43.
