  • Knowledge about nutrition is as known as food in relation with optimal health. Food sanitation is an effort to control food factors, people, places, and equipment that can cause illness or health problems. The purpose of this study was to description characteristics of nutrition and sanitation hygiene practices of food processing personnel at nutrition installation in karangasem hospital. This type of research is observational with a cross sectional study design, and the samples taken using the total population. The type of data collected is the sample identity data with the interview method using the identity form, data on the level of nutrition knowledge and sanitation hygiene with the interview method using a questionnaire, sanitation hygiene behavior data with the observation method using the checklist form, while hospital general overview data and the nutrition installation picture are obtained by recording through the annual report book or notes related to the data needed. Data analysis uses frequency distribution tables and cross tables which will then be described descriptively. The results of this study indicate that the level of nutrition and sanitation hygiene knowledge of processors in the good category is 16%, the category suffices 76%, the category lacks 8% and the sanitation hygiene behavior with positive behavior is 100%.
