This study aimed to determine the level of hygiene and the presence of Salmonella sp contamination in the smalholder milk cow dangke process, including fresh milk raw materials, labor, and processing equipments. Identification of hygienic conditions was done by using the questionnaire on 10 respondents in Sub-District Cendana, Enrekang District, and Salmonella sp contamination inspection conducted at the Laboratory of Kesmavet BB-Vet Maros. From the research results can be concluded, that the level of hygiene in the aspects of procurement and materials management was still in low level of hygiene; hygiene level on processing, hands of workers, mold shell and banana leaves are at sufficient levels to good hygiene; level of hygiene in storage and product sales aspect have shown a good state, and worker hands, mold shell, banana leaf and dangke product were not contamined by Salmonella sp.
