  • This study intend to determine the profile of fungal growth and pH value with different bioaditive use in coffee skin fermentation with batch systems at the ages of 1, 4, 6 and 8. This research was conducted in November 2017 - March 2018, at Animal Husbandry Laboratory University of Muhammadiyah Malang. The material used in this study is coffee skin waste as much as 1,350 kg divided into 27 parts which are divided into three treatments with the addition of a starter of 15 percent, with P1 (control) nine parts, P2 (rumen fluid) nine parts, and P3 (slurry ) nine parts. This study used a Randomized Block Design (RBD) which was divided into three groups with three treatments and four replications, and data analysis with quantitative descriptive. Fungus anaerobic growth population first week P1 3x107 ,P2 6x107, P3 5x107, fourth week P1 4x107 , P2 5x107, P3 5x107, sixth week P1 2x107, P2 3x107, P3 2x107, and eighth week P1 1x107, P2 2x107, P3 1x107 (with cfu units / ml). The pH value obtained from the first week of P1 6.7, P2 6.8, P3 5.2, the fourth week P1 6.5, P2 6.8, P3 6.1, the sixth week P1 6.7, P2 7.1, P3 6.9, and the eighth week P1 7, P2 7.2, P3 7.1. The conclusion of this study is the addition of 15 percent addition of coffee skin slurry to coffee skin fermentation in a batch system of anaerobic fungus population tends to decrease due to high pH.
