- Tomato is a climacteric fruit that produce high CO2 when the fruit is ripe because it still processing respiration even though it has been picked. Physiological activity of respiration in post-harvest fruits can cause a decrease in quality. One of simple technics that can be applied to maintain the quality and extend the life of tomatoes is Edible Coating. Durian seeds are food waste that contains high enough starch, so it can be used as a base for edible coating. This study aims to determine the effect of edible coating from durian seed starch in various concentrations (2%, 4%, 6%, 8%, and 10%) on the storability of tomatoes as a source of learning biology. The research is divided into 3 stages, stage I is extraction of durian seed starch, stage II is the manufacture and application of edible coating solution with various concentrations of tomatoes, stages III is observation of weight loss and organoleptic test. This type of research is True Experimental Research. The study design used non factorial completely randomized design (CRD). The technic used to analyze the data in this study is One Way ANOVA and Duncan testing 5%. The result in this study shows that there is a concentration influence of durian seeds to the weight loss and organoleptic tomatoes. The treatment used with concentration to the seeds of durian as much as 6% produced the lowest weight loss average of 5,48% for 8 days of storage. Moreover, it produced the best tomato color and was significantly different from all treatments. Treatment with 4% durian seed concentration produced the best aroma of tomatoes and tended to be favored by panelists. The results of this study can be used as a source of learning biology in the form of posters.
