- The purpose of this study was to investigate the decision-making process and customer satisfaction in choosing various flavors of milkfish sate. The number of respondents taken was 150 people by conducting organoleptic tests on 7 milkfish sate SMEs from Serang City, Serang Regency and Cilegon City which were carried out in Serang City Square. The method used is quantitative descriptive method. The sampling technique is done by accidental sampling. The analytical method used is descriptive analysis that is by spreading the questionnaire and then identifying the consumer decision-making process in selecting various milkfish satay. Secondary data is obtained by various agencies such as the Department of Tourism, Cooperatives and SME and other literature studies. The results of this study indicate that respondents interested in consuming milkfish sate due to taste, price and packaging color. Most respondents get information from friends and family and the basis for buying consideration is due to taste, price and aroma. Respondents were very satisfied with the attributes of milkfish sate. This research can be used as a basis for SMEs in prioritizing what attributes are most preferred by consumers in choosing milkfish sate Keyword: Consumer Decision, Consumer Satisfaction, Milkfish Sate.
