  • ABSTRACT The objective of this study was to find lactic acid bacteria (LAB), that had a high lactase activity and produced bacteriocin. Feces of young calves as microbe source was used to get LAB using MRS medium and incubated at 39°C for 24 hours anaerobically. The selection based on lactic acid production, catalase type, fermentation type, gram staining and cell morphology. Five isolates with high lactic acid production were use for lactase activity test. The highest lactase activity isolate was apllied as starter in milk fermentation with concentration of 100%, 50% and 25%. Lacticacid production, pH and total colony observed after48 hours incubated. The data obtain analyzed by variance analysis using Completely Randomized Design and follow Duncan's New Multiple Range Test for mean with significant different. The 33 isolates were identified as LAB with spesification produced lactic acid, negative catalase, homofermentatif, positive gram and cocci. The highest lactase activity isolate was taken out from the most 5 highest lactic acid production isolates namely LAB NWD 015. This isolate produced lactic acid 41.61%, pH 4.07 and total microbe 1.91X10" in medium with level 50% milk (P
