  • Application of microencapsulation process in food industries is increasingly being used. This means that the demand for wall materials is also high. Cassavas (Manihot esculenta) that the amount are abundant can be obtained with cheaper prices have the potential to be used as a wall material in microencapsulation processes, especially for the core materials that are hydrophilic or water-soluble. Liquid smoke has several important components which are volatile like acids, phenols, and carbonyls. This cause these components are easily lost in the storage process, so that the microencapsulation process is expected to provide protection for these critical components. The purpose of this study was to find the best concentration of HCl to hydrolyze the cassava starch thus suitable for use as wall material in the microencapsulation process of liquid smoke. Wall material made by the method of acid hydrolysis with HCl solution and starch ratio of 70:30 and the variation of the concentration of HCl solution are 0.3%, 0.5%: 0.7%. Hydrolysis time was varied for 2 and 2.5 hours. After that, wall material which have the best specifications are used in the liquid smoke microencapsulation with spray drying process. Before the microencapsulation process is done, enkapsulan and liquid smoke were mixed up so that having Brix value of 20oBrix, 25oBrix and 30oBrix. Acid hydrolysis with 0.5% HCl solution for 2.5 hours produces the best wall material with Dextrose Equivalent (DE) of 14.13 and solubility of 77.8%. The highest amount of yield in the liquid smoke microencapsulation obtained in mixture variation of 30oBrix, the second was 25oBrix, and the last was 20oBrix, while the best mixtured variation for protecting the core material based on acid, phenol, and carbonyl value was obtained on the variation 30obrix, then the second was 25obrix, and the last was 20obrix.
