  • The purpose of research is the application of protease enzyme from tuna industry waste as a bating agency in the tanning of tuna fish hides. The first stage of the research is to isolate proteolitic bacteria from the wash water of the intestine of the tuna fish loins at Bitung North Sulawesi. The second stage of the research was the fermentation of the proteolitic bacteria in the activated on pH and different temperature. The third stage is the application of the produced protease enzyme as a bating agency in the tanning of tuna fish hides. Of the 10 isolates produced from the waste water of the tuna fish intestines are the Bacillus sp. Sequencing of 16 S gen rRNA has homology as Bacillus subtilis with identity more 97 %. The protease content is achieved after 20 hours. The maximum adaptation produced will have the highest activity at 370 C is (5.30U/ml) and 15U/ml at pH 6,0. The treatment with protease produce by bacillus sp of 1%, 1.5% and 2% for bating agency comparable with commercial enzyme of 1% not significantly different there are for strength, flexibility, stretch. Therefore 1.5% protease of Bacillus sp already meets the standard requirements of SNI 06-0277-1998.
