Pengaruh Ketebalan Plastik Polietilen Densitas Rendah sebagai Bahan Pengemas terhadap Mutu Peterseli (Petroselinum crispum L.) selama Penyimpanan Suhu Dingin

- ABSTRAK Riset ini bertujuan untuk mengetahui pengaruh ketebalan plastik polietilena berdensitas rendah sebagai material pengemas terhadap kualitas Peterseli (Petroselinum crispum L.) selama penyimpanan dingin. Rancangan yang digunakan pada penelitian ini adalah metode Rancangan Acak Lengkap (RAL) menggunakan satu faktor perlakuan yaitu perlakuan ukuran ketebalan plastik polietilena berdensitas rendah (LDPE) dengan ukuran 0.02mm; 0.03mm; 0.04mm; 0.05mm; dan ketebalan 0.06mm. Penelitian ini diulangi sebanyak 3 kali ulangan sehingga didapatkan 18-unit hasil percobaan. Adapun parameter yang diamati meliputi; susut bobot, karakteristik, uji warna, tingkat kerusakan dan laju respirasi. Hasil dari penelitian ini menunjukkan bahwa ketebalan plastik densitas rendah (LDPE) berpengaruh sangat nyata terhadap susut bobot, karakteristik tingkat kerusakan dan laju respirasi dari peterseli. Perlakuan terbaik didapatkan dari penggunaan plastik LDEP dengan ketebalan 0.05mm dengan susut bobot 13.93%, warna 18.96, laju respirasi 43.81 mg CO2/kg/jam, nilai uji skoring karakteristik 3.73 dan tingkat kerusakan 3.87. Plastik LDPE dengan ketebalan 0,05mm dapat mempertahankan mutu peterseli lebih baik dibandingkan dengan ketebalan lainnya selama karakteristik 12 hari pada suhu dingin. ABSTRACT This research was aimed to determine the effect of Low-density polyethylene as packaging material for the quality of parsley (Petroselinum crispum L.) during cold room. Additionally, this study was to determine the thickness of the low-density polyethylene plastic which can retain the grade of parsley for a longer time. The design experiment used in this study was a Completely Randomized Design (CRD) method using one treatment factor, namely the treatment of low-density polyethylene plastic thickness (LDPE) with a thickness of 0.02 mm; 0.03 mm; 0.04 mm; 0.05 mm; and a thickness of 0.06 mm. This research was replicated 3 times in order to obtain 18 units of experimental results. The parameters observed include: weight loss, characteristics, color test, damage rate, and respiration rate. The results of this research signified that the thickness of low-density plastic (LDPE) gave a very significant effect on characteristics, color test, damage rate, respiration rate, and weight loss. The best handling was obtained by use of LDPE plastic with a thickness of 0.05 mm with a weight loss of 13.88%, the color of 13.93, 43.81 mg CO2/kg/hour for respiration rate, characteristic scoring test value of 3.73, and 3.87 for damage level. Low-density polyethylene plastic with a thickness of 0.05 mm can retain the quality of parsley better than other thicknesses during shelf life of 12 days at 8°C ± 2°C.
