- The quality and maturity of the fruit is fundamental in determining the ideal maturity class of bananas. This requires good management so that it can produce quality fruit products. Therefore, this research was conducted to support and assist humans in making it easier to classify the maturity class of bananas by utilizing digital image technology. There are many parameters in determining the quality of banana ripeness. Color and size are one of the parameters that can be used to categorize the maturity of bananas to be raw, half-cooked and cooked. With digital image technology, a camera can be used as a color sensor, this color sensor is responsible for segmenting banana and background images and also determining the size of the banana image. The output of this process will be used as input data using the fuzzy logic where the output of fuzzy logic is a determinant of the quality of the maturity level of bananas.
