PENGARUH KONSENTRASI ASAM KLORIDA TERHADAP KARAKTERISTIK FISIK DAN KIMIA GELATIN SISIK IKAN GABUS (CHANNA STRIATA)

- The purpose of the research was to know the effect of chloride acid (HCl) to physical and chemical characteristics of gelatin from snakehead scales. The research was conducted on May until September 2017. The method used was a randomized block design with one factor treatment (HCl consentration) which consisted of five level treatment (0.2, 0.4, 0.6, 0.8, 1%) and three replications. The variables observed were physical characteristics (yield, gel strength, and viscosity), chemical characteristics (pH, moisture content, and ash content), and analysis of amino acid. Base on the results, difference of HCl consentration was significantly affect to the physical characteristics (yield, gel strength, and viscosity) and chemical characteristics (pH and moisture content). The best product of this research was 1% HCl consentration were results of yield 5.34%, gel strenght 269.53 bloom, viscosity 2.25 cP, pH 5.43, moisture content 6.09%, and ash content 1.84%. Gelatin in this research have glisyn 27.46% and prolin 11.59%.
