- Food waste is still often found in various hospitals in Indonesia. The presence of patient food waste in the hospital resulted in inadequate nutrition of the patient. As a result, the patient suffers from malnutrition and affects the length of hospital stay and increased patient morbidity and mortality. Therefore it is necessary to do research on the factors that influence the occurrence of hospital food waste. The type of this research is analytic research and use Cross Sectional study design with total sample of 42 persons. Sampling technique by purposive sampling. The data are then presented in the form of tables and bar charts and narratives to interpret the data. The results showed the average of lunch waste that is 16,4%, appetite good 83%, portion size according to equal to 93%, food taste good equal to 79%, interesting cutlery equal to 82%, patient quite often consume food from out of the hospital by 65%. There was an relationships between appetite (p = 0,0040), cutlery (p = 0,000), and food from outside the hospital (p = 0,000) with lunch waste. There was no relationships between portion size (p = 0,999) and food taste (p = 0,072) with lunch waste. It can be concluded that the lunch waste at Anggrek Room of RSU Bunda Palembang included in the category of few and in accordance with hospital minimum service standard. Suggestions of this research should the hospital need to make changes or modifications to avoid the boredom of the patient to the food served in the hospital.
