  • Organic acid can be produced with fermented pineapple waste, which is contains food substances such as protein, glucose and fructose, in the other side, Indigofera zollingeriana can be used as a substrate in the fermentation process, Indigofera zollingeriana leaf contains with 28,98% crude protein that can be used for Nitrogen source. The objective of this research was to find out the best composition of the substrate from fermented pineapple waste and Indigofera zollingeriana leaf which produce the best organic acid as natural feed additive for poultry. This research was held on July to September 2018 in the experimental enclosure of the Animal Husbandry Study Program and the Integrated Chemistry Laboratory of the Faculty of Mathematics and Natural Sciences, Sriwijaya University. This research used Complete Random Design (CRD) with 5 treatments and 4 replications. The treatments were as follow: P1 (pineapple waste 100%), P2 (pineapple waste 98% and Indigofera zolingeriana leaf 2%), P3 (pineapple waste 96% and Indigofera zolingeriana leaf 4%), P4 (pineapple waste 94% and Indigofera zolingeriana leaf 6%), P5 (pineapple waste 92% and Indigofera zolingeriana leaf 8%). Variables include the content of acetic acid, lactic acid and citric acid using the HPLC method (High Performance Liquid Chromatograph). The results showed that liquid fermented of pineapple waste and Indigofera zollingeriana leaf reduced the content of acetic acid, increased the contentof lactic and citric acid. It was concluded that the best composition is the composition of pineapple waste 94% and Indigofera zolingeriana leaf 6% which can increase the content of organic acids in the form of acetic acid, lactate and citrate.
