  • The purpose of this research was to obtain heat-resistant lactic acid bacteria (LAB) isolates from rusip. This research was conducted from May until August 2018 using experimental laboratory method and data analysis was carried out descriptively. The research phase includes the sampling, sample preparation (with heating and without heating), Total Plate Count test, isolation of lactic acid bacteria, bacterial regeneration, confirmation test of lactic acid bacteria (Gram staining test, catalase test and motility test), heat resistance test at 70, 75, 80 85 and 90 oC during 2, 4, 6, 8 and 10 minutes heating. The results of this study showed that the total LAB on heated rusip had an average of 2,95 log cfu / ml of bacteria while the raw rusip had a higer count of bacteria which was around 3,16 log cfu/ml. Isolation of bacteria from heated rusip, resulting 8 bacterial isolates which 4 of them were candidates for heat-resistant LAB, namely R1, R2, R3, and R5. In general the 4 LAB candidates obtained were still able to survive at 90 oC for 8 minutes. The results of the best lactic acid bacteria isolates was in the R5 sample because there were still bacteria that survived at a temperature of 90 oC for 8 minutes with a total bacterial count of 1.25 log cfu/ ml.
