  • Based on data obtained in the Islamic Boarding School of Raudhatul Ulum Sakatiga that there were food-related illnesses in the form of diarrhea experienced by some students caused by food management hygienesanitation that has not meets the requirements. This study aims to analyze the application of food management hygienesanitation carried out in the Islamic Boarding School of Raudhatul Ulum Sakatiga. This study is a qualitative research with a descriptive approach. Determination of informants as sources of information using purposive sampling method with information collection is done through in-depth interviews and observations.The results showed that the sanitation hygiene of food management in the Islamic Boarding School Raudhatul ulum Sakatiga had not fulfilled the requirements of the Minister of Health Regulation No. 1096 of 2011, namely that the FIFO (First In Firts Out) method was not implemented, the condition of the storage area that looked dirty and damaged, processing space food that does not have a special area, as well as a storage container that does not have a lid. As for the technical requirements for sanitary hygiene that do not meet requirements such as walls that have not been waterproofed, the floor of the room is not cone, washing facilities that have not been separated, and food handlers who have not met hygiene requirements when processing food.The implementation of food management hygienesanitation carried out in the Islamic Boarding School of Raudhatul Ulum needs to be improved so that its application is in accordance with applicable requirements such as keeping for food hygiene materials storage, hand washing facilities, equipment and food ingredients made separate and complete equipment of food handlers such as gloves, masks and apron.
