- Snack food sold at fried food sellers generally lack hygiene sanitation, this is sourced from the selection of food ingredients, food storage, food processing, storage of cooked / finished food and serving of food that is less hygienic, especially those related to personal hygiene of food handlers. The purpose of this study was to analyze the application of sanitation hygiene to fried food sellers in Timbangan Village, North Indralaya District. This research is qualitative, the source of information of this research is 11 people. The variables studied included food handlers personal hygiene, selection, storage of materials, processing, storage of cooked / finished food and food serving. The instruments used in the study were interview guidelines, observation sheets, and document review as a comparison. The results showed that the application of sanitation hygiene to fried food sellers did not meet the requirements. From the personal aspect of hygiene the health check has never been carried out unless the food handler reports illness, the training has not been carried out, so the food handler is still behaving poorly while touching food. From the application stage of the principle of food sanitation hygiene several stages have not been carried out properly, checks on the quality of food ingredients at the time of receipt have not been carried out, storage of food ingredients has not used standards, and ways of processing food and sanitation and equipment that have not met the requirements. It was concluded that the application of sanitary hygiene did not meet the requirements of the RI Decree No. Kepmenkes. 942 of 2003 concerning food sanitation. It is hoped that health workers can provide training on food sanitation hygiene for street food sellers.
