PENGARUH WAKTU PENGUKUSAN NILA (Oreochromis niloticus) DAN PENAMBAHAN STARTER TERHADAP KOMPONEN BIOAKTIF BEKASAM

- This study aims to determine the effect of steaming duration and starter addition on bioactive components of Nile tilapia bekasam. This study used Randomized Block Design Factorial (RBDF) with 2 treatment factors which were steaming time (A) by 3 levels of treatment (0, 5, 10 minutes) and starter addition (B) by 2 levels of treatment (starter addition and without starter) then each combination was replicated two times. The parameters observed were pH, n-amino, peptide, and lovastatin. The results showed the steaming time and starter addition had been significantly affected the value of namino content (0.008925-0.03927%), peptides (7.56-25.2%), lovastatin (52.2625-56.275 ppm) respectively. On the other hand, the starter addition had not significant effect on the pH value (5.7-6.72). The interaction between steaming time and both of starter treatments had significant effect on peptide and lovastatin, on the contrary to pH and n-amino acid values.
