  • Feed is the main component to increase production in aquaculture. Feed that is digested easily by fish can be used as energy source and for growth. Feed digestion that is consumed by fish is influenced by some factors, one of them is availability of digestive enzyme. Protease enzyme is a group of enzymes that can hydrolyze feed especially protein. Papain is a proteolytic enzyme that is able to hydrolyze a proteins into simpler elements like peptides and amino acids. The purpose of this research were to determine the effect of papain enzyme with different dosage in artificial feed to growth performance of kissing gourami (Helostoma temminckii). The research use completely randomized design (CRD) with 4 treatments and 3 replications. Treatment P0 (0% papain enzyme in feed), treatment P1 (0.75% papain enzyme in feed), treatment P2 (1.5% papain enzyme in feed), and treatment P3 (2.25% papain enzyme in feed). Analysis of variance test showed that enzyme papain gave the significant effect on the absolute growth of weight and feed efficiency (P<0.05), but did not give the significant effect on survival rate and absolute growth of length (P>0.05). Optimum papain enzyme dosage on the kissing gourami to growth and feed efficiency was 0.75% in feed. Water quality parameters are temperature 26.3-31.3 0C, pH 5.0-6.8, dissolved oxygen 3.03-6.93 mg.L-1, and amonia 0.05-0.28 mg.L-1. The water quality was still in the approprate for kissing gourami fingerlings cultivation. Key words : feed, growth, kissing gouramy, papain enzyme.
