  • The objectives of this research was to determine the effect of pin surfaces, number of disc rotation, and material water content to the performance of pin mill on milling cinnamon. The method on this research was randomized block design using three factors and three replications. First factor was the type of pin surface P1 (plain) and P2 (serrated), second factor was the number of disc rotation V1 (2100 rpm) and V2 (2300 rpm), and third factor was the material water content W1 (14 %), W2 (15 %), and W3 (16 %). The parameters observed were the fineness, yield milling, and working capacity of pin mill grinder. The results showed the highest fineness was on treatment of P2V2W1 was 94.94 %, meanwhile the lowest was P1V1W3 that was 80.22 %. The highest yield milling was produced on treatment P1V2W1 (94.00 %), meanwhile the lowest was on treatment P2V1W3 (77.00 %). That P2V2W1 treatment was the treatment that produce the highest machine capacity, which was 0.375 kg/hour, meanwhile the lowest was P1V1W3 (0.325 kg/hour). Pin surfaces, number of disc rotation, and material water contenthad significant effect on the fineness, yield milling, and working capacity of pinmill grinder.
