- HARIS HIDAYAT. Analysis of Probiotic Properties of Lactic Acid Bacteria isolated from Fermented Bamboo Shoots of North Musi Rawas District (Supervised by AGUS WIJAYA and TRI WARDANI WIDOWATI). The objective of this research was to identify technological and functional properties (components of probiotic properties) of lactic acid bacteria from commercial fermented bamboo shoot. This research was conducted at the Agricultural Microbiology Laboratory and Agricultural Product Chemical Laboratory of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya, South Sumatra. This study used BAL which was identified by Aljabar (2018) from commercial fermented bamboo shoots which produced 48 isolates of BAL. However, in this study only tested 24 isolates of BAL was tested. The research used explorative method. The obtained data were presented in tabulation and discussed descriptively. The observed parameters were technological properties (Tolerance to bile salts and acids) and functional properties (Bacteriocin activity and hydrophobicity). The results showed that from 24 samples of lactic acid bacterial isolates, there were 3 samples of isolates that met the criteria as probiotic candidates, namely S2-4(2)1 (Lactobacillus), S2-4(4)2 (Weisella) and RT1-4(2)1 (Lactobacillus).
