  • The purpose of this research was to the inhibitory activity of Pediococcus halophilus towards pathogens and spoilage bacteria namely Vibrio cholerae, Staphylococcus aureus and Pseudomonas fluorescens in vitro and in situ. Inhibitory test in vitro was conducted using well-diffusion method. Two different Pediococcus halophilus isolates used in this study was origined from laboratory culture and fish paste isolate. This research was conducted from September to December 2016 by using experimental laboratory method and the obtained data was analyzed descriptively. From in vitro study, it was found that the inhibition effect of Pediococcus halophilus of laboratory was culture higher than Pediococcus halophilus of anchovy paste. All Pediococcus halophilus isolates had the inhibition activity towardsStaphylococcus aureus, Vibrio cholerae dan Pseudomonas fluorescens. Moreover, in situ test result showed that Pediococcus halophilus addition as fish paste starter did not decrease TPC value. The decreasing number of Staphylococcus aureus, Vibrio cholerae and Pseudomonas fluorescens occurred more rapidly in samples added with Pediococcus halophilus of anchovy paste isolated. However, the addition of isolates from both laboratory isolates and isolates from teri fish paste can accelerate the inhibition of test bacteria growth especially on Vibrio cholerae and Pseudomonas fluorescens bacteria.
