  • The food in islamic boarding schools is generally less in hygiene and sanitary, this is sourced from the less hygienic food processing, especially related to the personal hygiene of food handler and the poor handling of food at every stage of its implementation. This study aims to analyze personal hygiene food palace in boarding school Al-Ihsan Man 3 Palembang in 2018. This research is qualitative, the source of the research information is 5 people. The variables studied include personal hygiene food pegamah, acceptance, storage, processing, and serving food. Instruments used in the study were interview guides, observation sheets, and document review as a comparison. The results showed that the organization of food at boarding school Al-Ihsan Man 3 Palembang not yet qualified. From the personal aspect of hygiene medical examination has never been done unless the food court reported the illness, the training has not been done, so the food gamers still behave less well during the food touch. From the stage of the implementation of food several stages have not done well, checking the quality of food at the time of receipt has not been done, the storage of food has not been using standards Permenkes 942/2003, and the way of processing food and sanitation and tools that have not met the requirements. It is recommended to regularly check the health of the prisoner once in 6 months, increase the knowledge of food court, check every processing, and provide less sanitation facilities.
