This research aimed to 1) calculate the amount and economical value of food waste at school, office, and industry canteen in Palembang, 2) analyze factors that influence food waste at school, office, and industry canteen in Palembang, 3) learn how to handle food waste at school, office, and industry canteen in Palembang. This research was held in six locations on three different canteen groups. For school canteen, the research was held in canteen of SMA Negeri 6 Palembang and SMA Muhammadiyah 1 Palembang, for office canteen, the research was held in canteen of PT. Taspen (persero) and Dinas Kesehatan Provinsi Sumatera Selatan, and for industry canteen, the research was held in canteen of PT. Pupuk Sriwidjaja Palembang and PT. Interbis Food Industry Palembang. The method used in this research are survey method followed by non-reactive method. Data obtained in the field processed mathematically and decribe descriptively in accordance with the objectives achieved. Primary and secondary data processed by two ways, which were quantitative and qualitative. Quantitative data analysis was done by Microsoft Excel program, while One-Way Anova was done to see the difference of food waste at school, office, and industry canteen in Palembang, and Liniear Regression Stepwise Method was done to see factors that influence food waste at school, office, and industry canteen in Palembang. Meanwhile qualitative data analysis presented descriptively to support the quantitative data. The result of One-Way Anova showed that there is a significant difference of food waste at school, office, and industry canteen in Palembang. And the result of Liniear Regression Stepwise Method showed that there are three variables which has significant effects on food waste at school, office, and industry canteen in Palembang. The three variables were occupation, gender, and canteen hygiene. The total amount of food waste collected in this research is 1900,07 grams with average of 31,67 grams. Where for the rice waste itself, which has been converted into raw weight is 922,61 grams with average of Rp 49,174/person/lunch for the value of enocomic loss. While the value of enocomic loss for side dishes and vagetables waste id Rp 412,175/person/lunch. And the total value of enocomic loss for the whole food waste (rice, side dishes, and vegetables) is Rp 461,349/person/lunch. There are four ways to prevent or handle food waste that happened at school, office, and industry canteen, such as 1) all canteen should inform and set rules to students and employees not to waste food, 2) consumers should estimate the food they will be eaten, 3) educate the students and employees about the importance of food consumption and the bad side of food waste, and 4) take the leftovers home so that it does not wasted.
