This research aims to analyza the effictiveness of bilimbi extract in reducing heavy metal on yellow conch. The product was collected from Permai Beach, Bangka. Completely Randomized Design (CRD) was used in this research with four treatments and replied for three times. Treatments that used on this research are Bilimbi extract solution immersion (0%, 25%, 50%, dan 75%). Analysis parameter were done in this study involved lead (Pb) heavy metal measurement, acidity degree (pH), and sensory analysis (appereance, aroma, and texture). The result showed that different concentration of Bilimbi solution immersion give a significant effect to lead (Pb) content, acidity degree (pH), aroma, and texture, but there is no significant effect on appereance.
