UJI KINERJA ALAT FERMENTASI TAPAI KETAN PUTIH (ORYZA SATIVA L. VAR GLUTINOSA) DENGAN SISTEM ARDUINO UNO SEBAGAI PENDETEKSI KEMATANGAN

- This study aims to test the Arduino Uno microcontroller application so that it can work as a maturity detector in tapai fermentation. This research was conducted in June 2018 until November 2018 at the Laboratory of the Energy Department's workshop and Electrification and agricultural technology, Faculty of Agriculture, University of Sriwijaya. This study was descriptive and explorative methods, presenting data in the form of tables and graphs. The process of research and design of tools through various stages including planning, designing tools, assembling tools, testing and analyzing data. The parameters observed included testing CO2 levels, temperature, relative humidity, total sugar, texture, power requirements, accuracy and precision values. Measurements of fermented CO2 were carried out to determine the value of CO2 produced during the fermentation process until tapai made of sticky rice. The measurement of CO2 levels was obtained using a 78-hour maturity data logger of 2352 ppm. The fermentation CO2 content of tapai using the MG-811 CO2 sensor for 78 hours resulted in the maturity of glutinous rice at test 1 of 2784 ppm; testing 2 of 2653 ppm; and testing 3 is 2371 ppm. Temperature measurements were obtained at an average of 300C and humidity was 87% RH. Texture obtained an average of 4.03 gF and total sugar of 21.6% brix. The electric power needed for 78 hours is 19.5 Watt hours. The average value of the CO2 sensor accuracy test was 74.66% and the CO2 sensor precision was 79.52%.
