- Background: Corn silk is part of a corn plant that has not been used effectively because it is considered as waste. Corn silk contains antioxidants that are beneficial to the body. The purpose of this study are to decide the phytochemical characteristics, antioxidant capacity, antioxidant activity and organoleptic test in various formulations of ketan corn silk boiled water. Method: the study use descriptive method. Phytochemical screening was done by color test, antioxidant examination was done with DPPH (1,1-diphenyl-2-picrylhydrazyl) method and organoleptic test with 25 panelists about color, smell, taste, and acceptance of corn silk boiled water. Result: Based on phytochemical screening, the corn silk boiled water contained alkaloid, flavonoid, saponin, and quinone. Antioxidant capacity at formulations I, II, III, IV, and V are: 1.609 ± 0.353; 3,169 ± 0.333; 5,803 ± 0.053; 7,769 ± 0.134; 5,604 ± 0.107 ppm GAEAC. The value of antioxidant activity at the highest dose was 1.355. The result of organoleptic test showed that majority of panelist choose the neutral color, fragrant smell, usual taste and also good acceptance. Conclution: corn silk boiled water contained four phytochemical compounds that beneficial to health, the highest antioxidant capacity is 7.769 ppm, strong antioxidant activity and liked by panelists.
