- In comparison to its stem, teak leaves are less commonly utilized. Phenol and flavonoid are most abundant active component in teak leaves. The objectives of this research were to determine the most appropriate solvent and extract concentration against Bacillus cereus, Vibrio, Listeria monocytogenes, and Salmonella by well diffusion method, to determine MIC and MBC for each bacteria, to determine toxicity level, and to observed its stability in different pH, salt and sugar concentrations, and heating treatment. Maceration method was done using ethyl acetate solvent and the optimum concentration was 5% where the inhibition against B. cereus, L. monocytogenes, and Vibrio 6.7-8.056 m, however the extract could not inhibit Salmonella. The extract stable at range pH 4-5, salt concentration (1-4%) for B. cereus, and heating up to 80°C for 5 minutes for Vibrio vulnificus. Extract had medium level of toxicity (LC50=296.65 ppm).
