- Hydrolysisof starch is one of the methods to make glucose. Starch can be obtained from banana. The hydrolysis can be catalyzed by an acid or an enzyme.The objective of the research was to seek tne effect ot tne aCId concentration on tne hydroiysisof bananastarchat 100 "C of temperatureand atmosphericpressure.Theexperiment was carried out in a stirred reactor equipped with condensor. The hydrolysis were pseudo first order with respect to starch concentration. Increasing acid concentration caused the rate constant of hydrolysis increases.
