  • This study was conducted to determine the percentage of carcass and non-carcass male Bali cattle by feeding fermented cocoa fruit skin with different fermenters. Study was carried out from August 18 to October 16, 2014 starting from fattening periode at Teaching Farm of Faculty of Animal Science, Mataram University and was slaughtered at slaughtering house in Majeluk Mataram. Six male Bali cattle age of 1.5-2 years old with 183-196 kg body weight were used in . completely randomized design with 3 treatments and 2 replicates. Treatment P1. Skin cocoa fruits with no fermentor as the control group, P2 and P3 were similar to P1 with different fermentors. These were rumen fluid and bioplus probiotics respectively. Results of the study showed that there was no significant (P>0,05) differences between treatments including the control on slaughter weight, the percentage of carcass and non-carcass
