  • The aim of this research is to find out the optimum concentration Dragon fruit extraction by wet method using different Natrium Hydroxides (NaOH) concentrations. The physical quality of pectin is rendement and clarity, while the chemical quality is metoxyl and galakturonat levels. The researsh used Simple Complete Random Design with one factor which consists of five treatments of : 0.5 M ; 1 M ; 1.5 M ; 2 M each of them replicated 3 times means the whole research has been 12 trial units. The treatment had a significantly effect and then tested continued using a Honesty Difference Test (HDT) of 1%. The results showed that the concentration of NaOH 0,5M was the optimum concentration gave the best at physical and quality, consentration 2M NaOH gave the best at of chemical quality.
