- Physical damage to the egg in the form of a crack can cause the egg to be contaminated by Salmonella sp. One effort to overcome the effects of bacterial contamination is to use shallots (Allium cepa L.) as egg preservatives naturally. Based on previous research, shallots (Allium cepa L.) contain active compounds that can inhibit bacterial growth. This type of research is purely experimental using concentrations of onion extract (Allium cepa L.) 30%, 45%, 60%, 75%, 90%. The data analysis technique used was the analysis of normality, homogeneity, one-way ANOVA and duncan’s test. The results showed the most effective concentration of onion extract (Allium cepa L.) on the diameter of inhibitory zones of Salmonella sp. is at a concentration of 90% with a diameter of 38.97 mm. The results of this study can then be used as learning resources for Archaebacteria and Eubacteria with KD 4.5. Presenting data about the characteristics and role of bacteria in life for Class X high schools.
