  • Meatballs culinary business, a wide variety of food companies, require “Bakso Mercon Cak Kar” retaurant to learn about consumers' needs and desires to achieve consumer satisfaction. The purpose of this study is to analyse the impact on consumer satisfaction in “Bakso Mercon Cak Kar” restaurant and on consumer satisfaction in goods, prices, places and services. Sampling uses accidental sampling methods that correspond to consumers with 64 samples. The analytical method used is Structural Equation Model (SEM) SmartPLS 3.0 and the Customer Satisfaction Index (CSI). The result show that consumers visiting “Bakso Mercon Cak Kar” restaurant are very satisfied with the score of 82.9 percent, according to the CSI results. Variables that significantly affect consumer satisfaction are those of products, prices, services and locations. The improvement recommendations from the research results are to add inventory of meatballs, provide additional menus for each type of meatball, be kindly prepared to consumers of each kind of meatball, and improve the name tag for each product.
