  • Natural dyes are derived from chlorophyll, karetenoid, tannin and anthocyanin as a condition for color pigments substitute for synthetic dyes. Plants that have high anthocyanin content are the skin of red dragon fruit (Hylocereus polyrhizus) so they can be used as natural dyes. Natural staining of various plant extracts has often been done, but in determinating concentration is not optimal on the quality of preparat. The purpose of this study was to determine the effect of the quality of the extract of the skin of red dragon fruit (Hylocereus polyrhizus). The type of research used is the real experiment. The research method consists of several stages, namely the preparation stage, the implementation process, including making red dragon fruit peel extract (Hylocereus polyrhizus), diluting the extract into several concentrations (0%, 50%, 60%, 70%, 80%, 90%, and 100 %), and safranin. This study consisted of 24 samples of kenanga (Cananga odorata) section preparations with 8 treatment groups and 3 repetitions. The preparations are assessed based on the quality which includes the clarity of the preparations, and the color contrast. The data analysis technique used is descriptive kuantitatif with SPSS, Kruskal-Wallis and Mann-Whitney. The results showed that there was an influence of red dragon fruit peel extract (Hylocereus polyrhizus) as a natural coloring agent on the quality of kenanga (Cananga odorata) preparations. The preparations that have the best effect on quality are shown in the concentration of 90% red dragon fruit peel extract which has an average rating score of 2.87% with a probability value of 0.046> 0.05.
