- Jelly candy is one kind of candy that look transparent and has the texture with a certain elasticity. Addition of citric acid is usually done to provide an acidic atmosphere and improve the taste ofcandy jelly. Efforts to create innovative jelly candy products with the addition of natural dyes such as rose pigments that are safe, halal and high in antioxidants are still rarely done. The purpose of this study was to determine the effect of the addition of two acidifying sources (lime and lemon) which have high vitamin C and antioxidant content and to determine the addition of natural anthocyanin pigment to roses on the quality of jelly candy aloe vera. This study uses a nested design consisting of two factors. Main plot factor is a source of acidification consisting of 2 levels, namely lemon and lime. The sub plot factor is the concentration of red rose pigment which consists of 4 levels, namely concentration (0%, 2%, 4%, 6% (v/v)). So that obtained 8 treatment combinations, analyzed 3 times. The parameters observed included texture, color intensity (L, a+, b+), pH, water content, ash content, reducing sugar content, vitamin C, antioxidant activity, total anthocyanin, and organoleptics. The results showed that the addition of acidification had an effect on vitamin C, antioxidant activity, texture, sensory tests of preference and suppleness. The addition of rose pigment affects the total anthocyanin, vitamin C, antioxidant activity, color intensity (L and a+), sensory test of appearance, suppleness, and likeness. Thecandy is jelly best aloe vera produced in J1M3 treatment (source of lime acidification with 6% rose pigment) with a moisture content of 24.6%, ash content of 0.3%, reducing sugar 1.6%, vitamin C 17.6mg / 100g, texture 10.2 N, antioxidant activity 14.7%, pH 4.1, total anthocyanin 1.39mg / L, brightness level (L) 33.7, redness level (a+) 1.0, yellowish level (b+) 3,9, appearance 5,6 (interesting), elasticity 4.9 (slightly springy), favorite 4,6 (somewhat like). The value of ash content of candy jelly aloe vera fulfills SNI ie maximum 3%
