  • Dragon fruit (Hylocereus costarticensis) has the potential as one of the anthocyanin sources that can function as natural dyes, antioxidants, and anticarcinogens. Anthocyanin is a water-soluble pigment responsible for blue, purple, violet, magenta, red and orange. Anthocyanin can be damaged at high temperatures (heating) commonly used in making a number of food products. This study aims to make natural dyes from dragon fruit skin, looking for the effect of solvent ratio on yield and get the best solvent ratio to get the maximum yield. The research was conducted by maseration extraction method (that is simple filtration carried out by soaking dragon fruit skin in 96% ethanol solvent, 10% citric acid solvent, and 96% ethanol + 10% citric acid at room temperature and protected from sunlight). The extraction results were then filtered and concentrated with a rotary vacuum evaporator and then observed using a binocular microscope. The results of anthocyanin extract on dragon fruit skin (Hylocereus costaricensis) were compared with the comparison of safranin wherein the standard was known to be certain anthocyanin content. The best yields obtained in dragon fruit skin extract were using solvent ethanol 96% + 10% citric acid.
