  • Synthetic dyes in addition to affecting the quality of food are also harmful to health. However, alternative concentrations of natural dyes to improve food quality are not optimal. The purpose of this study was to find the most effective concentration of dragon fruit peel extract and its effect as an alternative dye to the quality of soyghurt and research results are expected to be used as a source of learning biology. This type of research is True Experimental Research using The Posttest Only Control Group Design. Samples using various concentrations of dragon fruit peel extract with a concentration of 0%, 4%, 8%, and 12% were repeated six times. Data analysis used One Way Anova followed by Duncan Test and Kruskal Wallis test at 5% significance level. The results showed that there were differences in the average levels of crude fiber in each treatment and there was no difference in the average pH value in each treatment. Dragon fruit peel extract has the most effective effect on crude fiber at a concentration of 4% with an average of 1.512% and an effective effect on the pH value at a concentration of 4% and 8% of 4.32. The organoleptic test showed that the color characteristics of soyghurt were significantly different whereas the characteristics of taste, aroma and texture were not significantly different. Research results can be used as a source of learning biology. The conclusion of this research is the effect of concentration of 4% and 8% is more effective as an alternative coloring to the quality of soyghurt.
