- This research was conducted at the OM Ayam Sambal Ijo restaurant. OM Ayam Sambal Ijo is one of the businesses engaged in food processing services located in the city of Malang, precisely on Jl. MT. Haryono No. 209. Where the problem found in OM Ayam Sambal Ijo is less optimal supply chain management implemented. In this study aims to find out how supply chain management implemented by the restaurant OM Ayam Sambal Ijo located in Malang City, based on the concept of lean supply chain management. Data collection techniques in this study using two techniques, the first technique of interviews to the owner OM Ayam Sambal Ijo based on the variables supplier, procurement, manufacturing, warehousing and lean logistics, the second technique to be present is a questionnaire to 30 consumers who came to OM Ayam Sambal Ijo based on a lean customer variable. In this study using two data analysis techniques is the first technique to use triangulation used to process interviews data with steps 1) data reduction, 2) data display and 3) draw conclusions, The second technique uses the scale range used to process the questionnaire data. The results showed the management of supply chain at the restaurant OM Ayam Sambal Ijo based on suppliers, manufacturing, warehousing, logistics and lean customers that were found suitability with the theory of implementation of the lean supply chain management concept . While in the lean procurement is found inconsistency with the theory of implementation of the lean supply chain management concept, where in theory of the process of procurement of raw materials is done by automatic or electronic way, but the OM Ayam Sambal Ijo Some process of procurement of raw materials still using manual way or OM Ayam Sambal Ijo comes directly to the supplier.
