- Edible coating is something thin layer made from materials that can be eaten, shaped for coated fruit or placed between component functioning food as barrier to displacement mass so ableextend age save it. Minimal processing (minimal processing) or known with term cut fresh. Fresh cut is processing fruit or vegetable as stripping, cutting, and slicing. This study aims to (i) obtain concentration carboxymethyl cellulose that can extend age save it fruit apple varieties manalagi (ii) get the best dyeing time for coated fruit Apple varieties manalagi. This study aims to (i) obtain a stabilizing concentration of carboxymethyl cellulose which can prolong the shelf life of apple varieties manalagi (ii) obtain the best immersion time to coat apple varieties of manalagi. The research method uses factorial Randomized Block Design with 9 days of storage. The first factor was the difference in the addition of carboxymethyl cellulose concentrations (0%, 1%, 1.5% and 2%) and factor II was the difference in the duration of immersion (2 minutes and 4 minutes). Parameters analyzed included weight loss, vitamin C levels, texture, Total Plate Count (TPC), Titrated total acid, Total dissolved solids, and color intensity. The result showed an influence on carboxymethyl cellulose concentration on the shrink parameter weight, texture, vitamin C content, Total Plate Count (TPC), redness (a+), brightness (L), and yellowish (b+) and get the best dyeing time on the shrink parameter weight, texture, vitamin C content, Total Plate Count (TPC), Total dissolved solids, redness (a+), brightness (L), and yellowish The best treatment is the C2T2 treatment (addition concentration CMC 1% and dipping time 2 minutes) with a shelf life of 9 days (day of apple crop damage storage temperature 150C). With details of data is ; Weight loss 0,58%, vitamin C levels 8,65 mg/100g, texture 0,62 N, Titrated total acid 30,00 %, Total dissolved solids5,19 oBrix, Total Plate Count (TPC) 6,18 x 106 CFU/ml, brightness (L) 66,13, yellowish (b+) 23,25, and redness (a+) 11,45.
