  • This study aims to determine the number of Bacterial Cells and the amount of mold with the addition of carrageenan and sorbitol. The material used in this study is cow milk type of cattle Friesien Holland (FH). Cow's milk is taken from PSO Maju Mapan Jabung. This research method used experimental method with Factorial Random Block Design. The variables measured in this study are Number of Bacterial Cells and the number of molds. Data on bacterial cell count and total molds were analyzed descriptively quantitatively. The results of this study showed that the number of bacterial cells in the highest milk dodol that is located in the treatment of K0S0 of 2 × 102 cfu / g and the lowest in treatment K1S1 of 0 × 102 cfu / g. The results of this study also showed that the number of fungus on day 0 in all treatments was 0 × 103 cfu / g, the highest number of fungi on the 5th day of K2S1 treatment was 8 × 103 cfu / g and the number of fungus on the day- 10 highest at K2S2 treatment of 11 × 103 cfu / g. The conclusion of this research is the addition of carrageenan and sorbitol which can decrease the number of bacterial cells that is K2S0 treatment of 0 × 104. The addition of carrageenan and sorbitol which can decrease the amount of mold is K2S0 treatment.
