- Background: Apple is a fruit which has many antioxidant activities. One of the apple processed product is apple dodol. The steps of processing apple into dodol are through washing, pulverizing, mixing, boiling, cooling, and packaging. In the process of apple dodol making, there is a chance of apple antioxidant degradation which resulted in the declining of its antioxidant activity. This was caused by heating, light, and contact with metal. ABTS is one of the reagents that used to test antioxidant activity. This reagent can show te radicals and be detected by a Spectrophotometer UV-Vis Goal: To know the antioxidant activities value in fresh Manalagi apple and Manalagi apple dodol by IC50 score. Method: Antioxidant activities was tested using ABTS by Spectrophotometer UV Vis on 737 nm wavelength. Result and Conclusion: ABTS solution is read on 737 nm wavelength and the analysis of antioxidant activities in fresh Manalagi apple resulted in IC50 value of 34.258,88 while on Manalagi apple dodol, IC50 value was 116.581,61. It can be concluded that the antioxidant activities of fresh Manalagi apple is higher that Manalagi apple dodol.
