- Watercress is plant that has potential to be developed as an antibacterial agent. The ability of the material as antibacterial caused by active substances such as flavonoids, tannins, and alkaloids. These compounds will inhibit the bacterial growth by forming complexes with extracellular proteins until damage the cell walls and the bacterial cell membranes. This study aims to determine the effect of different types of solvents on the extraction of watercress leaf to the inhibition zone the growth of Streptococcus mutants bacteria and the results of this study used as a learning source of biology. This research was conducted a true experimental research. This research design used was a completely factorial randomized design with 10 combinations of treatments and 3 replications consisting of A factor type of solvent (ethanol and aquades), B factor extract concentration (0%, 25%, 50%, 75%, 100%). This research analysis was conducted by using normality test, homogeneity test, two-way variant analysis, and BNT test with significant level of 0.05. The result of this research showed that the differences in solvent types and the extract concentration of watercress leaf affected to the inhibition zone of Streptococcus mutants bacteria growth. While the interaction between the types of solvents and the extract concentration of watercress leaf did not affect the inhibition zone of Streptococcus mutants bacteria growth. In the ethanol extract of watercress leaves which produced the largest inhibitory zone is at the concentration of 50% with average inhibition zone of 10.47mm. While in the aquades extract of watercress leaf which produces the largest inhibitory zone is at the concentration of 75% with average inhibition zone of 8.30mm. The results of this research can be used as a biological learning resource for senior high school class X in KD 4.4.
