  • Background: Deep fried cooking oil contained trans fatty acids and free radicals influence Lecithin Choleslerol Acyl Transferase (LCAT) enzyme activity to lowering the HDL levels. Hesperidin in lemon peel extract (Citrus limon), increase the LCAT enzyme activity in increasing HDL. Objective: To know the effect of lemon peels extract (Citrus limon) in increasing HDL level of male Wistar rats’s blood (Rattus norvergicus) induced by deep fried cooking oil. Methods: Experimental, post test only control group design. The samples were divided into 4 groups. K(+) group were given with only Deep Frying Cooking Oil and three other treatment groups were given with Deep Frying Cooking Oil and lemon peel extract with certain amount of doses: 125, 250, 500 (mg/kgBB/day). Data were analyzed using One Way Anova, bonferroni, and linear regression test. Result: Mean of the HDL levels in positive group 10,99 mg/dl, P1 18,58 mg/dl, P2 26,09 mg/dl, P3 36,13 mg/dl. One Way Anova test showed a significant difference result among lemon peel extract with HDL levels (p<0,05). Linear regression test obtained R2=0,874, that showed the effect of lemon peel extract in levels by 87,4% Conclusion: Lemon Peel extract increase the HDL levels on male white rat inducted by deep fried cooking oil.
