  • Cashew farmers in Sumenep Regency have been selling their products in the form of raw cashew seeds or shoots without any further processing production process due to limited farmers in the processing, so that farmers do not get high economic value. The purpose of this research is to know and analyze the amount of added value, processing cost, profit, and constraint from processing fried cashew nut. This research method uses quantitative and qualitative descriptive with data collection techniques through questionnaires, interviews, observation and documentation. Population and location of this research is farmer group of Balang Kondang Pakondang Rubaru Sumenep East Java with amount of research sample counted 40 people. The results of the study found that the added value obtained from the processing of cashew nuts per day production was Rp. 22.691. Total cost for processing fried cashew nuts per day production is Rp 2,801,288 The profit obtained from processing fried nuts per day production is Rp. 21.044 packs. Farmers' obstacles in processing fried cashews are the difficulties and shortcomings of modern supporting tools during drying and stripping of raw materials of cashew nut and cashew nuts. In addition, farmers are less interested in the case of cashew entrepreneurs into processed products that have a higher selling value than the raw sale due to the lack of farmers knowledge and innovation how to process cashew nuts into high-value-processed products.
