- A microbiological quality test study based on the total plate number of mold colonies in white pepper (Piper nigrum) from three markets in Malang city needs to be done to get information that can be utilized as biology learning source for students as well as literacy for society especially white peppers consumer in Malang city. This study aims to: 1) Determine total plate number of mold colonies which is contained in white peppers from three markets in Malang city, 2) Determine the quality of white peppers which are sold in three traditional markets of malang city based on the total plate number of the mold colonies, and 3 ) Implement the results of the study as a source of biology learning in a form of Student Worksheet (LKPD). This research is quantitative descriptive research. The seller is selected by purposive sampling technique under two conditions: the white pepper seller sells white pepper with powder and seed type, and the white pepper sold with the powder and seed type which has expired label and no expired label. The market in this research is Pasar Besar, Blimbing market, and Landungsari market. The results showed that the total plate number of mold in the white pepper of the three markets showed the highest contamination rate of pepper contamination 3 x 104 colony/gr located in Pasar Besar. As for the other white pepper samples contained mold contamination but not exceeding the limits of mold contamination in accordance to the provisions of National Standart. The quality of white pepper samples from Big Market is 60%, Blimbing Market is 40%, and Landungsari Market is 30% above the maximum limit of ALT shell specified according to the Food and Drug Supervisory Agency (BPOM) no. HK.00.06.1.52.4011. The results of this study can be used as a source of biology learning in the form of Student Work Sheets (LKPD).
